1. Lightly score the goose in diamond shape, sprinkle with half garlic, thyme, salt and pepper, then coat with flour.

2. Pre-heat oven to 250 C. Now, heat the skillet under high heat and sear the liver on all four sides till golden brown or sear with a blowtorch.

3. Cover with garlic and thyme to the bottom and top. Place in oven for 25-30 minutes at 250 C.

-Goose liver, 1 whole piece
-Garlic, 1 whole garlic, bruised with skin on
-Thyme, 12 sprigs, bruised
-Sea salt flakes, to taste
-Freshly grounded black pepper, to taste
-Flour for coating the goose live, moderate amount
