1. Lightly score the goose in diamond shape, sprinkle with half garlic, thyme, salt and pepper, then coat with flour.

2. Pre-heat oven to 250 C. Now, heat the skillet under high heat and sear the liver on all four sides till golden brown or sear with a blowtorch.
